Chivalry is a technology unique to the Franks that can be researched at the Castle in the Castle Age in Age of Empires II: The Forgotten.
This technology makes Stables work 40% faster.
As the vast majority of a Frankish army is Paladins, Chivalry helps a lot with making a large army in a short amount of time.
